Although both the answer and definition are plural nouns, I don't understand how they can define each other.

'given silver back' is the wordplay.
'given' becomes 'set' (I can't justify this - if you can you should give a lot more credence to this answer).
'silver' becomes 'Ag' (Ag is the chemical symbol for silver).
'back' says the letters should be written backwards.
'set'+'ag'='setag'
'setag' written backwards gives 'GATES'.
