Take him as is, in rag order, eating raw fish? (7)

Ross

I believe the answer is:

sashimi

I'm a little stuck... Click here to teach me more about this clue!

'raw fish?' is the definition.
(I've seen this before)

'take him as is in rag order eating' is the wordplay.
'him as is' can be anagrammed to 'SASHIMI'.
But, I am not sure how this is indicated.

Can you help me to learn more?

(Other definitions for sashimi that I've seen before include "Something of chef's" , "Japanese raw fish - I'm as his (anag)" , "Japanese dish of thinly sliced raw fish" , "dish from Japan" , "food in Japan" .)

I've seen this clue in The Irish Times.
