I believe the answer is:

curlew

'shore bird' is the definition.
(I know that curlew is a type of shore bird)

I don't understand how the remainder of the clue works.

(Other definitions for curlew that I've seen before include "Wader with curved bill" , "Shorebird of the sandpiper family" , "Large shorebird" , "Wader with downcurved bill" , "Shorebird with long curved bill" .)

I've seen this clue in The Times.
