I believe the answer is:

rotate

'turn' is the definition.
(I know that rotate is a more specific form of the action the turn)

'gold over to gallery' is the wordplay.
'gold' becomes 'or' ('or' is the heraldic name for gold).
'over' says the letters should be written backwards.
'to gallery' becomes 'tate' (Tate Modern, Tate Britain etc).
'or' back-to-front is 'ro'.
'ro'+'tate'='ROTATE'

(Other definitions for rotate that I've seen before include "Turn around an axle, swivel" , "Turn around on axis or central point" , "'Er, to a T? (anag)" , "Pirouette" , "Turn around as on axle or spit" .)
