I believe the answer is:
eleven
'two' is the definition.
The definition and answer can be both quantities as well as being singular nouns.
Maybe they are linked in a way I don't understand?
'hours behind one in time' is the wordplay.
'hours behind' becomes 'le' (I can't explain this - if you can you should believe this answer much more).
'one in' indicates putting letters inside.
'time' becomes 'even' (I have seen 'time of day' mean 'even' so perhaps 'time' could also mean 'even').
'le' put into 'even' is 'ELEVEN'.
