I believe the answer is:
eleven
'two' is the definition.
The answer and definition can be both quantities as well as being singular nouns.
Perhaps they are linked in a way I don't understand?
'hours behind one in time' is the wordplay.
'hours behind' becomes 'le' (I can't justify this - if you can you should believe this answer much more).
'one in' means one lot of letters goes inside another.
'time' becomes 'even' (I have seen 'time of day' mean 'even' so perhaps 'time' could also mean 'even').
'le' put inside 'even' is 'ELEVEN'.
