'soup' can be an answer for 'course' (I've seen this before). I am not certain of the 'opening' bit.

'very highly placed' is the wordplay.
'very' becomes 'so' (both can mean 'extremely').
'highly placed' becomes 'up'.
'so'+'up'='SOUP'
