'work' becomes 'op' (common abbreviation for 'opus').
'over' shows that the letters should be reversed in order.
'provided with' becomes 'lent' (I've seen this in other clues. I am not sure about the 'with' bit.).
'op' written backwards gives 'po'.
'po'+'lent'+'a'='POLENTA'

(Other definitions for polenta that I've seen before include "Italian boiled cornmeal" , "Italian food" , "Maize flour dough" , "Italian maize dough" , "(Dough made with) cornmeal" .)
