Working out script with old ham from Italy (10)

Ross

I believe the answer is:

prosciutto

I'm a little stuck... Click here to teach me more about this clue!

'ham from italy' is the definition.
'prosciutto' can be an answer for 'ham' (I've seen this before). I'm not sure about the 'from italy' bit.

'working out script with old' is the wordplay.
'working' indicates anagramming the letters.
'with' is an insertion indicator.
'old' becomes 'o' (abbreviation as in OT - Old Testament).
'out'+'script'='outscript'
'outscript' with letters rearranged gives 'prsciutto'.
'prsciutto' enclosing 'o' is 'PROSCIUTTO'.

Can you help me to learn more?

(Other definitions for prosciutto that I've seen before include "Italian food" , "Raw cured Italian ham" , "Meat" , "sliced delicacy" .)

I've seen this clue in The Telegraph.
