Would humped one be crook turning into a shrub? (8)

Ross

I believe the answer is:

camellia

I'm a little stuck... Click here to teach me more about this clue!

'shrub?' is the definition.
(camellia is a kind of shrub)

'would humped one be crook turning into a' is the wordplay.
I cannot quite understand how this works, but
'one' could be 'me' (a setter might use 'one' to humourously mean 'me') and 'me' is found in the answer.
'a' is within the answer.
This explanation may well be incorrect...

Can you help me to learn more?

(Other definitions for camellia that I've seen before include "Showy shrub, rel. to tea" , "Flowering plant related to tea" , "Shrub related to tea plant" , "Email Cal about the flowering shrub" , "Shiny-leaved shrub" .)

I've seen this clue in the Sydney Morning Herald.
