nascent

(I've seen this in another clue)

'knight with a bouquet' is the wordplay.
'knight' becomes 'N' (chess abbreviation).
'with' means one lot of letters go next to another.
'bouquet' becomes 'scent' (the scent of a wine).
'n'+'a'+'scent'='NASCENT'

(Other definitions for nascent that I've seen before include "Coming alive" , "being coined" , "Coming into being, beginning to develop" , "just coming into effect" , "Just beginning existence" .)
