'is laid out' indicates anagramming the letters.
'at' says to put letters next to each other (I've seen this in other clues).
'midnight' becomes 'g' (the middle letter in 'night').
'meal' is an anagram of 'leam'.
'leam' after 'g' is 'GLEAM'.
