'anyway ed's holding the platter' is the wordplay.
'anyway' indicates anagramming the letters.
'holding' indicates putting letters inside.
'the platter' becomes 'tray' (I've seen this in another clue).
'eds' with letters rearranged gives 'sed'.
'sed' placed around 'tray' is 'STRAYED'.
