'out' indicates anagramming the letters (out can mean wrong or inaccurate).
'deal'+'ten'='dealten'
'dealten' anagrammed gives 'AL DENTE'.

(Other definitions for al dente that I've seen before include "Cooked so as to be firm when eaten" , "London area" , "Tel Edna (anag.); firm to bite" , "Like some food" , "not so easy on the teeth" .)
