(I know that head is a type of director)

'demands regularly to succeed hotel' is the wordplay.
'regularly' means one should take alternating letters (regularly take one letter, leave next etc.).
'to succeed' means one lot of letters go next to another.
'hotel' becomes 'h' (phonetic alphabet: alpha, bravo, charlie etc.).
The alternating letters of 'demands' are 'ead'.
'ead' after 'h' is 'HEAD'.

(Other definitions for head that I've seen before include "Cranium" , "See 14" , "See 25" , "Lead - school principal" , "Source of river, leader" .)
