I believe the answer is:

gudgeon

'fish' is the definition.
(gudgeon is a kind of fish)

'dugout gone off' is the wordplay.
I cannot quite see how this works, but
an anagram of 'gone' is 'geon' which is within the answer.
This explanation may well be incorrect...
