(I've seen this in another clue)

'grabs end of one' is the wordplay.
'grabs' becomes 'cop' (I can't explain this - if you can you should give a lot more credence to this answer).
'end of' says to hollow out the word (remove centre letters) (I've seen 'ends of' mean this).
'one' becomes 'sole' (synonyms).
'sole' with its centre removed is 'se'.
'cop'+'se'='COPSE'
