I believe the answer is:

noisette

I'm a little stuck... Click here to teach me more about this clue!

'piece of meat' is the definition.
(I've seen this before)

'number one gundog polishing off last' is the wordplay.
I cannot quite see how this works, but
'number' could be 'set' (I have seen 'number of games' mean 'set' so perhaps 'number' could also mean 'set') and 'set' is located in the answer.
'one' could be 'o' (I've seen this in other clues) and 'o' is present in the answer.
'last' could be 't' (I've seen this in other clues) and 't' is found in the answer.
This may be the basis of the clue (or it may be nonsense).

Can you help me to learn more?

(Other definitions for noisette that I've seen before include "Flavoured with hazelnuts, chocolate, say" , "Chocolate; piece of meat" , "Rolled piece of lamb; nutty sweet" , "Small piece of boneless lamb" , "Chocolate made with hazelnuts" .)

I've seen this clue in The Times.
