Crossword Genius

One such as Escoffier, say, cut short hunger (4)

Ross

I believe the answer is:

ache

'hunger' is the definition.
(I've seen this in another clue)

'one such as escoffier say cut' is the wordplay.
I cannot quite see how this works, but
'one' could be 'a' (a thing is one thing) and 'a' is found in the answer.
The remaining letters 'che' is a valid word which might be clued in a way I don't understand.
This explanation may well be incorrect...

'short' is the link.

(Other definitions for ache that I've seen before include "Dull prolonged pain" , "Each (anag.)" , "burn" , "Persistent dull pain" , "Dull continuous pain" .)

I've seen this clue in The Times.
