I believe the answer is:

angle

I'm a little stuck... Click here to teach me more about this clue!

'degrees in geometry?' is the definition.
The answer and definition can be both related to thinking as well as being singular nouns.
Maybe you can see a link between them that I don't see?

'one' is the wordplay.
I cannot really understand how this works, but
'one' could be 'an' (an apple is one apple) and 'an' is present in the answer.
This explanation may well be incorrect...

'with' is the link.

Can you help me to learn more?

(Other definitions for angle that I've seen before include "Point of view - fish" , "Early settler" , "Approach to problem" , "Right, acute or obtuse" , "Old English settler" .)

I've seen this clue in the Evening Standard.
