'one very good' becomes 'st' (I can't explain this - if you can you should believe this answer much more).
'coarse' becomes 'rude' (I've seen this in another clue).
'and' means one lot of letters go next to another.
'large' becomes 'L' (eg in clothes sizes).
'st'+'rude'+'l'='STRUDEL'
