I cannot quite understand how this works, but
'person' could be 'soul' ('soul' can be a synonym of 'person') and 'soul' is located in the answer.
'suit' could be 'case' ('case' can be a synonym of 'suit') and 'case' is found in the remaining letters.
A single letter 't' remains which might be clued in a way I don't see.
This explanation may well be incorrect...

(Other definitions for cassoulet that I've seen before include "dish" , "French stew made with meat and beans" .)
