I believe the answer is:

rime

I'm a little stuck... Click here to teach me more about this clue!

'winter' is the definition.
Although both the answer and definition are singular nouns, I can't see how they can define each other.

I cannot understand how the remainder of the clue works.

Can you help me to learn more?

(Other definitions for rime that I've seen before include "Ice" , "Frost left after freezing fog, or frozen dew" , "dated poetry" , "Ancient Mariner produced?" , "Hoar frost" .)

I've seen this clue in The Irish Times.
