'wound' says the letters should be written in reverse (as in wound back).
'up watch' becomes 'timer' (a watch might be used to time something. I am not sure about the 'up' bit.).
'in' indicates putting letters inside.
'middle of' says to take the centre.
The middle letters of 'week' are 'ee'.
'timer' put inside 'ee' is 'etimere'.
'etimere' reversed gives 'EREMITE'.
