Ross

I believe the answer is:

encodes

I'm a little stuck... Click here to teach me more about this clue!

'scrambles egg losing grams' is the definition.
I can't tell whether this definition defines the answer.

'second whisking' is the wordplay.
I cannot really understand how this works, but
an anagram of 'second' is 'ncodes' which is within the answer.
A single letter 'e' remains which might be clued in a way I don't see.
This may be the basis of the clue (or it may be nonsense).

'on' acts as a link.

Can you help me to learn more?

(Another definition for encodes that I've seen is " Encrypts".)

I've seen this clue in the Sydney Morning Herald.
