'unhappy' becomes 'sad' ('sad' can be a synonym of 'unhappy'**).
'eating' is an insertion indicator.
'scrambled' indicates an anagram.
'egg' is an anagram of 'gge'.
'sad' going around 'gge' is 'SAGGED'.

(Other definitions for sagged that I've seen before include "Sank, subsided" , "Drooped in the middle" , "Drooped, sank" , "Slumped" , "Hung down loosely" .)
