Although both the answer and definition are singular nouns, I cannot understand how they can define each other.

'sporting organisation' is the wordplay.
'sporting' becomes 'golf' (I can't justify this - if you can you should give a lot more credence to this answer).
'organisation' becomes 'club' (club is a kind of organization).
'golf'+'club'='GOLF-CLUB'

'and' acts as a link.
