I believe the answer is:

cinemas

I'm a little stuck... Click here to teach me more about this clue!

'movie theatres' is the definition.
('cinema' can be a synonym of 'movie theatre')

'spy agency's recruiting blokes around' is the wordplay.
'spy agency' becomes 'saic' (I can't justify this - if you can you should give a lot more credence to this answer).
'recruiting' means one lot of letters goes inside another (inserted letters are recruited into the word).
'blokes' becomes 'men' (bloke can informally mean a man).
'around' says the letters should be written backwards.
'saic' going around 'men' is 'samenic'.
'samenic' in reverse letter order is 'CINEMAS'.

Can you help me to learn more?

(Other definitions for cinemas that I've seen before include "Where films are shown" , "Picture-houses" .)

I've seen this clue in the Sydney Morning Herald.
