I believe the answer is:

hoopoe

I'm a little stuck... Click here to teach me more about this clue!

'this bird?' is the definition.
(hoopoe is a kind of bird)

'could you hope to include ducks' is the wordplay.
I cannot really see how this works, but
'ducks' could be 'oo' (I've seen this in other clues) and 'oo' is present in the answer.
an anagram of 'hope' is 'hpoe' which is within the remaining letters.
No letters remain.
This explanation may well be incorrect...

'with' acts as a link.

Can you help me to learn more?

(Other definitions for hoopoe that I've seen before include "occasional visitor here" , "Pink Eurasian bird with black and white wings and tail" , "Bird with curved bill" , "bird required" , "Flier" .)

I've seen this clue in the Evening Standard.
