I believe the answer is:

geese

'birds' is the definition.
(goose is a kind of bird)

'gosh south-eastern' is the wordplay.
'gosh' becomes 'gee' (I've seen this in other clues).
'south eastern' becomes 'se'.
'gee'+'se'='GEESE'
